Gin And Tonic Pancakes

Pancakes Mix:

  • 200g self-raising flour
  • 1 egg
  • 2 tbsp caster sugar
  • 250ml made up PINK 47 gin & tonic
  • A little oil for frying

Pancake Topping:

  • 250ml made up PINK 47 gin & tonic
  • 2 tbsp caster sugar
  • 1 lemon juiced and a little peel for garnish

PINK 47 Gin & Tonic Pancake Recipe

 

Step 1.

To make the topping... Pour in the made up PINK 47 gin & tonic into a saucepan along with the sugar and lemon juice and reduce for a few mins until syrupy then set to a side.  

Step 2.

To make the pancakes... Put all the flour, sugar, egg and salt into a mixing bowl, pour in the 2nd PINK 47 gin & tonic and whisk the batter until nice and smooth. Oil a large non-stick pan, set over a medium heat, add two spoonfuls of the gin batter into the pan and cook for 1-2 mins on each side. Repeat with the rest of the batter. Serve with the topping drizzled all over and a piece of lemon garnish.
